| 1848 - Catering Project Manager Our Client and the Role: Our Client was established over 40 years ago and is a Spanish food group specializing in the local supply and distribution of food and food related services. Its strong identity, linked to the constant commitment to technological innovation, has positioned our client as a leading supplier in providing services in areas such as health, defence, remote sites, education centres, specific population groups, hotels, home care and seniors’ residences. They are seeking a Spanish speaking Catering Manager to manage 2 kitchen units at mining sites in Chile. This is a permanent position on an open ended contract. Reporting into the General Manager - Chile, the successful candidate will be responsible for all aspects of the catering operations of the units, according to the client contract specifications and within the S.O.Ps laid down by our client. In addition you will be responsible to maintain the food budget on the target given by our client and will also be responsible for effectively managing all the staff working in the kitchen units. Specifically you will adapt and develop the menu cycle accordingly to contract specifications and product availability from our clients warehouse. You will control the orders of products in line with the approved menu cycle. You will ensure that from the reception of goods and the service of the meals, all company standards of Hygiene, Food Safety, Health and Safety and HACCP are implemented, monitored and recorded. You will ensure that all meals are ready on time and presented accordingly to site specifications and our clients standards. You will be present at front of house during a minimum of 2 services per day. You will provide maximum support to customers special requests in relation to the contract specifications but without compromising day to day operations. You will ensure that staff are trained to operate the equipment in the dining facility and record this training. You will report any malfunction of equipment to the maintenance department and you will obtain the Monthly Satisfactory Certificate from the end Client. You will make sure the menu cycle is adapted in accordance with cost targets. You will monitor the Stock Management System on a daily basis and be able to operate it. You will be responsible for the Meals Registration System in accordance with site specifications. You will supervise the daily kitchen requisitions of goods and make sure they are in line with customers attendance forecast. You will be responsible for ensuring wastage is minimized with respect to Food and Safety regulations. You will be responsible for Cash Book record’s and balance’s and will maintain Man Day Cost in line with budgeted targets. You will complete all company paper work in time frame allocated; for e.g. Time Sheet, Duty Roster, Vacation Roster, Cash Request, Health Certificate Record Book, Uniform Request etc. You will ensure professional training and coaching plan in all sectors of the location: Kitchen, Restaurant, Stores, Dish and Pot wash area. You will identify high potential staff, recommend promotion where applicable and where vacancies exist. You will ensure that all staff are following catering regulations and S.O.P’s. You will discuss disciplinary issues with the General Manager and HR Department to ensure fairness and equality. Finally you will control tidiness and cleanliness of staff accommodation and will maintain a good working environment with a good atmosphere and morale for staff. Knowledge and Skills: You should be an energetic and accomplished Spanish and English speaking Catering Manager or Executive Chef. You should be highly self motivated with the ability to communicate and motivate a varied team. Experience of working in contracted catering services for a leading international facilities management provider would be ideal, as would experience of working in post conflict areas, remote sites or in other arduous environments. You will have an excellent understanding of commercial catering operations and specifically a high degree of knowledge on food hygiene including HACCP, food handling and food presentation concepts and knowledge of popular catering and bakery products. You should possess excellent verbal and written communication skills in Spanish and English, be able to adapt to rapid changes in a positive manner and work to tight deadlines. Superb inter-personal skills and instant credibility are essential as you will be inter-facing with a number of people from different backgrounds, nationalities and religions. You will be resourceful with a flexible outlook, have the ability to multi-task in order to handle competing priorities and be able to fit in to an international dynamic and multi-cultural environment. Finally you should possess a Drivers Licence and be PC / IT literate. This is an outstanding challenge for an accomplished Spanish speaking Catering Manager looking for something different. Whilst our Clients operation is somewhat different they are in it for the long term and are looking for a minimum of 18 – 24 months commitment. The basic salary will be around 30,000 Euros net. Free accommodation is provided in the form of an apartment in (in the Manhattan of Santiago de Chile, also known as Sanhattan). A company car is also provided. In addition you will have the use of a phone to call family and friends and also use of the internet for e-mails etc. There is 4 weeks holiday per year and in the first year there will be one return flight back to your home base. In the second year there will be 2 return flights.
